PB&J Overnight Oats
This is basically like having dessert for breakfast!

Ingredients
PB Overnight Oats
  • 1 cup plant milk (I love oatly oat milk)
  • 1/2 cup coconut milk
  • 2-3 tbsp peanut butter
  • 1 tbsp 100% maple syrup or coconut sugar
  • 1/2 tsp vanilla extract
  • 1 cup oats
  • 1 tsp chia seeds
  • 2-3 tbsp Berry Chia Seed Jam see recipe below
Mixed Berry Chia Seed Jam
  • 3 cups mixed berries I used organic blueberries, raspberries, strawberries
  • 2 tbsp chia seeds To be honest, mine came out a bit more liquidy than I would've preferred so maybe add an additional tablespoon of chia seeds.
  • 2 tbsp maple syrup
  • 2 tbsp lemon juice
  • 1 tsp pure vanilla extract

Mixed Berry Chia Seed Jam
  • 3 cups mixed berries I used organic blueberries, raspberries, strawberries

Instructions
PB Overnight Oats
  1. Add the milks, peanut butter, maple syrup and vanilla to a high speed blender and blend until smooth.
  2. In a bowl or jar, mix the oats and chia seeds together. Pour in the blended peanut butter mixture and stir to combine.
  3. Cover the container, place it in the refrigerator and leave it to soak overnight.
  4. The following morning, in a separate jar layer the overnight oats with the Berry Chia Seed Jam. Top with a dollop of peanut butter, chopped nuts and enjoy!
Mixed Berry Chia Seed Jam
  1. Roughly chop berries of choice and add them to a medium sized saucepan with 2 tablespoons of water. Mash the berries into desired chunkiness.
  2. Over high heat, bring the mixture to a boil and then lower to a simmer for about 10 minutes.
  3. Remove from heat and stir in the rest of the ingredients.
  4. Pour into a jar, cover and place it in the refrigerator overnight (and up to 2 weeks), allowing the chia seeds to thicken the mixture.
