Spicy Nachos
Me: Do you think people would know it's not real cheese? Alex: Nah, I don't think so! Recipe Inspired by Siete Nacho Cheese (purchased from Lazy Acres, Encinitas)

SPICY* NACHO CHEEZE SAUCE
  • 1 tbsp olive oil Use water of broth if oil-free
  • 1 yellow onion diced
  • 2 carrots peeled and small diced
  • 2 jalapenos* one diced and one sliced (for garnish)
  • 2 cloves garlic minced
  • 1 tsp paprika
  • Sea Salt to taste
  • 1/2 lemon juiced
  • 2 russet potatoes peeled and very small diced
  • 1 cup cashews
  • 1 can chipotle peppers in adobo sauce*
  • 1/2 cup unsweetened almond milk
  • 1/2 cup Water
  • nutritional yeast to taste
NACHOS
  • 1 bag corn tortilla chips or make your own
OPTIONAL TOPPINGS
  • 1 can black beans drained and rinsed
  • 1/4 cup red salsa
  • Cilantro
  • 1 Avocado
  • Limes cut into wedges
  • Vegan Sour Cream
  • Ground Seitan
  • Pickled Onion

  • 1 can chipotle peppers in adobo sauce*
  • 1/2 cup unsweetened almond milk
  • 1/2 cup Water

  • 1/4 cup red salsa

Instructions
SPICY NACHO CHEEZE SAUCE
  1. Preheat oven to 400 degrees F.
  2. Over medium heat, sauté onion, carrot, jalapeño, and garlic cloves with olive oil until softened.
  3. Add paprika and a pinch of sea salt and stir.
  4. Add potatoes and cashews and sauté for an additional 2 minutes.
  5. Stir in the lemon juice.
  6. Add almond milk, water, 2 to 3 chipotle peppers and 2-3 tsp of adobo sauce (depending on your spice tolerance). Bring to a simmer, and cook until carrots and potatoes are soft.
  7. Pour mixture into a high speed blender or food processor and blend until smooth, adding water as necessary. Be very careful when blending hot items!
  8. Add salt and nutritional yeast to taste. Nutritional yeast gives it the cheezy flavor!
NACHOS
  1. Spread the corn tortilla chips out on a large baking sheet.
  2. Pour the Spicy Nacho Cheeze Sauce over the chips.
  3. Sprinkle black beans, salsa and any other desired toppings on top of the chips.
  4. Bake the tray of nachos for 5-10 minutes until all of the ingredients are warm and slightly toasty.
  5. Serve with any additional fixings on the side (like lime wedges, sour cream, cilantro, etc) for your party guests to build their own plates. Enjoy!
